We love it when an old favourite comes back all prettied up and ready to impress.

Aqua is exactly that, with a new food profile, a new interior and a much different brunch from the last iteration.

Walk in to ceilings dripping with bling … chandeliers swoop in waves around the room, reflecting not only the light but the sea outside. It’s a room that’s got floor to ceiling windows all the way around and the part sea, part bustling city views bring a definite wow factor.

Brunch itself is more of an adult affair.  Get your first drinks then start at the buffet for a spot of antipasti: we enjoyed the small pastries, the bresaola, melanzane and most of all, the beautiful fresh oysters.

Starters and mains are served to the table on the most beautiful serveware, which really gives Italian dolce vita! These early platters might have been our favourites of the whole brunch: the fresh crab meat salad, alongside the superb octopus carpaccio … both absolutely delicious and so easy to eat.  We also enjoyed the Black Angus battuta (the Italian version of tartare) served on an incredible slice of sourdough - this was fresh, with a great depth of flavour.

It was difficult to choose a favourite from the mains. Lovers of lobster will love the generous chunks on top of the tomato based spaghetti, while the steak with a chimichurri and a side of trifolati mushrooms was a nice, light dish.  The ravioli parmigiana will make pasta lovers happy.

Finish with a couple of bite-sized desserts from the buffet - we recommend the meringue and, for a larger plate, the Basque cheesecake.

Drinks were excellent. The prosecco based Rossini was super while the virgin forbidden fruit came in a large glass and was just a delight. Also on offer is prosecco from the Veneto, French rose, a New Zealand and an Italian white and a Sicilian red.  Champagne was Perrier-Jouet.

Service was friendly and efficient while the singer and saxophonist kept diners entertained.

This is very much a laid-back affair, the brunch where you can speak to your friends and admire the views in this newly upscale restaurant.
