Chef Simone De Vivo is Executive Chef at The WB™ Abu Dhabi, Curio Collection by Hilton, where he leads the culinary teams behind The Director’s Club, Sidekicks and The Overlook. Originally from Naples, Italy, he brings more than 20 years of experience across Italy, Spain, the Caribbean and the UAE.

His career includes roles with The Ritz-Carlton, Atlantis Paradise Island and Sandals Resorts, followed by Conrad Abu Dhabi Etihad Towers, where he served as Executive Sous Chef overseeing ten dining concepts. Drawing on his Italian roots and international experience, Simone combines creativity with a focus on quality, sustainability and memorable dining experiences
